Â
Grundy, 25, came to Colorado from the Miami Dolphins, where he was the assistant cornerbacks coach for the 2021 season in his second year with the club. In 2020, he was an offensive assistant coach for three months and then shifted into scouting (both college and pro). He began his coaching career at the University of Minnesota in 2019, but it was short-lived as the COVID pandemic hit; he was recommended for hire there by his junior college coach – and current CU tight ends coach – Clay Patterson.
Â
He graduated from the University of Texas-San Antonio in December 2019 with a bachelor’s degree in Multidisciplinary Studies. At UTSA, he was a dual threat quarterback and in two seasons, passed for 993 yards and five touchdowns while rushing for 164 yards and one TD.   He started nine games as a junior in 2018, including the season opener at Arizona State, and led the Roadrunners to a 25-21 win over rival Texas State.
Â
Grundy began his college career at Northeastern Oklahoma A&M, where as a freshman and sophomore he combined to rush for 534 yards and seven touchdowns and pass for 1,408 yards with 11 TD’s. NEO claimed the Southwest Junior College Football Conference title his sophomore year.Â
Â
He was born February 5, 1997 in Tulsa, Okla., and graduated from Tulsa’s Booker T. Washington High School, where he lettered in football and basketball. His hobbies include playing basketball and working out. An All-State performer as a senior in high school, he passed for 1,633 yards and 18 touchdowns and rushed for 460 yards and four scores.Â
